Wild Icelandic rhubarb lends its bright pink color and a slightly sour flavor to the salt pictured above. The rhubarb salt flakes pair well with seafood, pork, and roasted vegetables, and they can add depth to sweet desserts. (Sea salt is the secret ingredient in my dark chocolate cookies, adding a great little crunch and another layer to the sweet, chocolatey flavor.)
